Apple Butternut Squash Soup

I am really digging my Health Master Elite! Tonight I tried out one of the recipes from the book that came with it, and added a few of my own ingredients. It turned out delicious!!! Even the kids were  asking for seconds! Along with the soup I served bib lettuce leaves with cherry tomatoes. We just sprinkled a little lime juice on top then wrapped them up like little rolls and dipped into our soup! 



Like I mentioned, I made this with my Health Master.
It can be made in any kind of blender that has the same "cooking" options, like a Vitamix. If you don't have anything like that you can cook it on the stovetop.

You need:

-One butternut squash, peeled, seeded and cooked
-1 Red Delicious apple cored and chopped
-1 clove of garlic, peeled and chopped
-1 small onion, peeled and chopped
-1 sprig of thyme, stem removed
-1 tbsp coconut oil
-1 tbsp cinnamon
-2 cups of low sodium vegetable broth 
-sea salt and pepper to taste
-lime wedges
-1 tbsp coconut sugar (optional)

-Sauté onion, garlic, Apple and thyme in coconut oil for about three minutes.
-Add all ingredients except salt and pepper and coconut sugar to blender. If you are using a Health Master/vitamix, turn speed up to 8 (medium high) and blend for 8 minutes. 
-Add coconut sugar and blend for about 10 seconds.
-Plur into bowl amd squeeze with lime juice. Add salt and pepper if desired. Serve and enjoy!


*STOVETOP: after sautéing ingredients, add the rest of the ingredients minus the coconut sugar. Simmer for about 10-15 minutes then add the coconut sugar at the very end. Stir in and remove from the stove. Blend until desired consistency is reached.

Yum

We recently moved back to Utah from Arizona, and it's so cold here! I have a hard time getting out of.my snugly bed every morning. Lately I have been drinking the most fabulous concoction. In my belly

About a month ago I bought a Juiceman, and it is one of the best investments I've ever made, and a small one at that. I bought it for about $80 at Target. What I really REALLY want is a Vitamix! All in good time.

So I've been juicing about everyday. It's messy and  time consuming, but totally and completely worth it. I feel amazing and there is just something about the process of washing, chopping, and preparing REAL food that you know is going to do your body and mind a whole lot of good.

I think these days everything is so rushed, so instantaneous. We have a real problem with slowing down and really getting involved in the process of things. It's all about instant gratification, and I definitely don't think there is anything wrong with that (HELLO, have you heard about what I do for a living? Talk about instant gratification!) But I think it is vital to our souls to LIVE IN THE MOMENT. This is something I am really trying to do, especially since it seems that a month is over in 11 seconds and my kids are growing like weeds.


Wow, you think, she's really getting deep about slicing carrots. Well, yes, I am. Because just that process has made me realize how rushed I am all of the time and that I just need to slow the heck down.

It's also been satisfying only filling my grocery cart up with fruits and veggies. Of course I have other things on hand at home, but mostly, it's fruits and veggies. I like that my kids are learning to eat real food and not just stuff that is in boxes and bags.



So getting back to the basics of eating real food has been...life changing.

So in the morning, every morning I have:

-Green drink with one scoop of Greens. Greens is a drink mix made of 8 servings of organic veggies and fruits and 38 super herbs. It's amazing. My kids drink it everyday. You can get it on my website.
-8 oz of water with 2 tbsp of natural Apple Cider Vinegar. Nasty, but so good for you!

Ya, it really doesn't look appetizing, does it? .....ha ha! But it does a body good!


-Later in the day I have some kind of fruit juice. This is my favorite concoction! For snacks I usually have raw nuts, seeds, veggies, pb on toast, or a ProFit shake. (Also available here). My son loves them. He would literally only drink ProFit shakes if I let him. He finds the bag in the pantry and brings it to me and signs "more".

-I drink tons of water and coconut water throughout the day.

And then I just kind of throw together meals with whatever I have. I try to be creative.

Healthy Iced Coffee

Iced coffee that is delicious, full of vitamins and minerals, and can help you lose weight? Yes, please. Signeth me uppeth.

Recipe:
8 oz 1% milk
1 scoop Herbalife Cafe Latte Formula 1 Shake
1/2 scoop Herbalife Formula 1 Shake (Whatever flavor you want. I like Cookies & Cream, but Dutch Chocolate and Vanilla are great too)
Folgers Instant Coffee Crystals or Pero
Mix well and pour over ice

Total Calories: 160

Sweet Tooth?

I have a major sweet tooth.
I can eat a whole pan of cookies by myself, no problem.
I think I ate an entire pie on Thanksgiving by myself once.
Yes. I like baked goods.
This can definitely hinder any goals I have to get back in shape and maintain a healthy weight.
So in order to keep my cravings under control, I keep a bowl of gum balls on my table, and whenever I feel like having some sugar, I pop two in my mouth and chew away.
It's a great way to satisfy your sweet tooth without gaining unwanted pounds.

recipe

I have changed my way of eating, first due to health problems and now I'm sticking to it. It is by far the most amazing change in my physical lifestyle I've ever done (and thats saying a lot for someone who has tried just about every diet). It's called combined eating. I will do a post more in depth on it later, but to put it shortly, I've lost weight, my stomach is flat, I have no digestive problems, and I feel "clean" and healthy. AW. SOME.

So here is a recipe I made last night from the recipe book. I hate fish, but this salmon rocked.

Salmon With Brown Sugar Glaze
3/4 cup dry white wine ( I have no knowledge of wine, so I was actually looking around for powdered wine!)
1/4 cup butter or earth balance
2 teaspoons Old Bay seasoning
2 lbs. salmon fillets
1/3 cup spicy brown mustard
1/4 cup brown sugar

Preheat oven to 375

Combine wine, butter, and Old Bay seasoning in a small saucepan; bring to a boil and simmer 3 minutes. Remove from heat.

Place fish in a baking dish, pour wine-butter sauce over. Bake for 5 minutes.

Meanwhile, combine mustard and sugar in a small bowl.

Remove fish from oven and raise heat to broil setting. Spread mustard-sugar mixture over fish, place under broiler and broil until topping is bubbly; about 3 minutes. Serve at once.

Note: It's important not to overcook fish. The instructions above are for fish fillets that are about 1" thick. Generally, fish should be cooked about 8-9 minutes per inch. If it isn't done, keep checking it every 2 minutes.
